Somewhere in this hemisphere, it's Cinco Mayo. Now I know I'm not Mexican, nor is anyone that I know, for that matter, but geez right now I am ready for some Tequila and Mexican food and a party. Just to change the atmosphere in here a bit. So any reason to celebrate anything is fine with me. So let's celebrate Cinco Mayo together! So let's do some Mexican savouring of recipes and cooking, crafts (like maybe find out how to make our own pinatas or something else Mexican), maybe virtually visit a Mexican tourist attraction or two while we're at it! Just to drag me back out of the rabbit hole I was getting rapidly sucked into after the very weird Coronavirus news cycle today. More about that sometime in the future. Right now I want to have fun, so excuse me, while I take us on a mini Mexican holiday to help them celebrate Cinco Mayo, so we might have something to celebrate as well.  🌵

Cinco de Mayo Recipes  Oh boy! What'd ya know! I lucked out there! I was just going to Allrecipes.com to look for Cinco de Mayo recipes and as soon as I got there before I even had a chance to search for any there was this page right in my face!  And I think I found the first recipe there that I want to try, and it's this one: 

Classic Frozen Strawberry Margarita

"A refreshing variation on a classic frozen margarita."

Ingredients

  • 1/4 cup sliced fresh strawberries
  • 1 1/2 fluid ounces tequila
  • 1 fluid ounce lime juice
  • 1/2 fluid ounce triple sec
  • 1 teaspoon white sugar, or to taste
  • 1 cup ice cubes
  • 1 wedge lime (optional)
  • 1 teaspoon white sugar (optional)

Directions

  1. Blend strawberries, tequila, lime juice, triple sec, and 1 teaspoon sugar in blender to combine, about 10 seconds. Add ice cubes; blend on high until the ice is crushed, about 15 seconds.
  2. Rub lime wedge around the rim of a glass. Spread 1 teaspoon sugar onto a plate. Dip glass rim in sugar to coat. Pour margarita into the glass.

The secret is in the seasonings! I whipped these up on my own using stuff I had on hand. Shredding the chicken is the most time-consuming step, but it's worth it in the end. Give these babies a try! Serve with sour cream and a side of Spanish rice.

  • Place the chicken in a large pot and add water to cover. Bring to a boil over high heat, then reduce the heat to medium-low, cover, and simmer until the chicken pieces are no longer pink, about 10 minutes. Shred chicken by placing two forks back to back and pulling meat apart. Set the shredded chicken aside. Meanwhile, combine the cream of chicken soup, sour cream, and chili powder in a saucepan. Bring to a simmer over low heat, stirring occasionally, then turn off the heat and cover to keep warm.
  • Heat the butter in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the shredded chicken, chopped green chilies, taco seasoning, half of the bunch of chopped green onion, and water. Allow to simmer for 10 minutes. Stir in the lime juice, onion powder, and garlic powder; simmer for an additional 10 minutes.
  • Preheat an oven to 350 degrees F (175 degrees C). Stir 1 cup of the soup mixture into the skillet with the chicken mixture. Spread the remaining soup mixture on the bottom of a 9x13 inch baking dish.
  • Fill each tortilla with chicken mixture. Sprinkle Cheddar cheese over the chicken filling before folding the tortillas, reserving half of the shredded cheese for topping the enchiladas. Fold tortillas over the filling and place seam-side down in the prepared pan.
  • Pour enchilada sauce evenly over the enchiladas. Cover with the remaining 1 1/2 cups of Cheddar cheese. Sprinkle the reserved chopped green onions and the sliced olives on top of the cheese. Bake in the preheated oven until filling is heated through and the cheese is melted and bubbling, about 25 minutes.

These Mexican fritters are very common at fairs. In my border hometown, the line at this stand is always overwhelming. People wait hours in line just to get a taste of these churros. I have run across several recipes but this is the best one by far.

  • In a small saucepan over medium heat, combine water, 2 1/2 tablespoons sugar, salt and 2 tablespoons vegetable oil. Bring to a boil and remove from heat. Stir in flour until mixture forms a ball.
  • Heat oil for frying in a deep fryer or deep pot to 375 degrees F (190 degrees C). Pipe 5- to 6-inch strips of dough into the hot oil using a sturdy pastry bag fitted with a medium star tip. Do not overcrowd the oil. Fry until golden; drain on paper towels.
  • Combine 1/2 cup sugar and cinnamon. Roll drained churros in cinnamon and sugar mixture.

We have determined the nutritional value of oil for frying based on a retention value of 10% after cooking. The exact amount may vary depending on cook time and temperature, ingredient density, and the specific type of oil used.
Keep the oil temperature consistently between 350 and 375 degrees F (175 and 190 degrees C) as you fry. If it gets too hot, turn off heat and let temperature drop down to that range.
